Christmas time is coming’

Christmas time is coming, and I am up to my eyeballs in parties and catering so this will be short and SWEET’literally. I have been asked for my cheesecake recipes this past week, so I will share them with you today and then will return to write more after the first of the year. BASIC CHEESECAKE I have used this recipe for years, and it is wonderful. It will make three cakes. Whip together until smooth: 3 pounds of cream cheese (6 packages) at room temperature 2 1/2 cups sugar 1/2 cup plus 2 tablespoons flour Add: 6 eggs 1 1/2 cup heavy whipping cream 2 teaspoons vanilla 1 teaspoon lemon juice 1/2 cup powered sugar Pour this into a crumb crust or pie crust and bake at 325 for about 45 minutes. Place a pan of water in the oven to steam the pies. During the holidays, I add a can of pumpkin pie filling and a little pumpkin pie spice and have a great pumpkin cheesecake. CHOCOLATE TRUFFLE CHEESECAKE This is so very creamy and rich. 2 8 ounce cream cheese at room temperature 2/3 cup sugar 2 eggs 1 teaspoon vanilla 1 cup semi-sweet chocolate chips, melted Whip the cream cheese and sugar, then add the eggs and vanilla. When this is well blended, whip in the melted chips. Pour this into a chocolate wafer crust and bake at 350 for 45 minutes. You can top this with strawberries or raspberries and whipped topping. I have a couple of groups I use for “guinea pigs” and they know it’and love it. I find new recipes and test them on these ladies. Well, I found this one last month and tried it last Friday. What a hit and so here it is. PECAN CHEESECAKE PIE 1 8 ounce cream cheese 4 eggs, divided 3/4 cup sugar, divided 2 teaspoons vanilla, divided 1 cup chopped pecans 1 cup corn syrup Beat cream cheese, 1 egg, 1/2 cup sugar and 1 teaspoon vanilla until smooth. Pour this into a 9 inch pie crust. Sprinkle on the pecans. Whisk together the corn syrup, remaining 3 eggs, cup sugar and 1 tsp vanilla. Pour this over the pecans. Bake at 350 for about 45-55 minutes until pie is set. Cool completely and serve with whipped topping or a scoop of vanilla bean ice cream. Might as well go all the way with the calories!
